Recipe: Oa-mazing Oatmeal Cookies


They're so oa-mazing (HA! I crack me up!) that they're gone.  Less than 2 hours after I baked them.  Granted this is a small recipe that makes only 8 cookies (large cookies) but there were only the two of us eating them...But I don't feel too guilty.  These are not the worst cookies you could eat.  In fact, they're relatively healthy.  Here's what you'll need:


  • 3 TBSP Butter (softened)
  • 1/4 Cup Brown Sugar
  • 1/4 Cup Agave Nectar
  • 1 Egg
  • 1 TBSP Water
  • 1/2 Cup Unbleached All Purpose Flour
  • 1/2 Tsp Salt
  • 1/4 Tsp Baking Soda
  • 1 1/2 Cups Rolled Oats 
  • 1 Tsp Cinnamon

Preheat oven to 350 Degrees F.  Prepare a cookie sheet by using nonstick spray or covering the sheet with foil.  Mix together the butter, sugar, agave, egg and water.  Make sure it's well mixed.  In another bowl sift the flour, salt and baking soda then add the rolled oats.  Add the dry ingredients to the wet ingredients and mix well.  If you'd like you can add raisins or nuts or dates or anything you'd like.  Use a spoon to drop spoonfuls onto the cookie sheet and then bake 12-15 minutes.

Like I said, this recipe made 8 large cookies but you could probably get 16 small cookies out of it.  The original recipe had honey in it and more sugar but I switched that out so I could give some to Margaux.
