Last week I came across the Pioneer Woman's recipe for Lemon Blueberry Pancakes. I LOVE pancakes. LOVE. I could eat them every morning. Seriously, LOVE. I can't stress that enough. That being said, I'm pretty lazy. I don't make them very often and when I do I use a just add water mix or use Organic Batter Blaster (yes, I giggle every time I make them). Also, the hubs is not really a fan (he's from another planet...) so it's rare that I make them. He DOES enjoy a good pancake that has other things in it, but all I've got in my repertoire is banana walnut. I use the just add water mix and throw in mashed bananas and chopped walnuts. Nothing fancy.
These pancakes are made from scratch. With fresh blueberries and lemon juice. And cake flour. On labor day I sent the hubs out to pick up the couple ingredients I was missing and set out to make these pancakes.
You guys, they were delicious! The only thing I would have changed is to add a bit more sugar to the batter because the blueberries were tart. But if you have sweet blueberries this wouldn't be a problem! They're pretty good reheated too. I will say that mine weren't as thick as the ones in the PW's picture so maybe I added too much milk? They were still good just thin so the blueberries tended to pop out...not really a problem though.
